And...I'm Back



Hey, guys! I'm back from vacation and finally settled in! What a great time. The week was spent relaxing on the beach, reading, and enjoying time with family. It was lovely.
It was Steph's second time on the beach, and she still loved it. Each morning, she said she didn't want to go out, but once she was there, she loved playing in the sand and being held in the water.
In the shallows of the water, there were little white fish that would nibble at your feet and ankles. I didn't like them at first, but they became my little friends by the end. I guess there are some spas that have little fish that they have in the pedicure tubs that clean one's feet....I wouldn't go there, but I liked to think these fish were my natural spa treatment. :)
Back to the house after our last day on the beach. I didn't want Steph to get anymore sun, and the only thing we found down there was our Uncle's t-shirt. It was adorable :)

It looks like I had about a 3 pound gain from vaca. Blech. It just shows me that I am still at a point where I need to keep track of my calories. I was without internet/resources all week, so I kinda threw in the bag. Boo, me.

My official weigh-in will be Friday. Hopefully, I will have gotten rid of most of the evidence of my vacation indulgences.

I have less than 2 weeks left of my summer vacation, then its back to the grind at school. I actually find it easier to lose when I'm working because I have more of a schedule. We shall see :)

Whole-Grain Challenge


Amy's Challenge for week 5 was to create a meal using whole-grains. For me, this was pretty easy, since that's basically all I use when cooking meals anymore. I decided to use ingredients I had on hand and made a SUPER EASY stir-fry. I realized as I was finishing that all of my ingredients were from Trader Joe's! Love me some T.J.'s!!!!

First, I browned some Savory Baked Tofu:
Then added some Asian Vegetables with Sauce:
Microwaved some Organic Brown Rice:
And, all together....YUMMMY!!!!

I hope everyone has a fantabulous week!!! I will be enjoying a week on the beach. I may or may not have access to a computer/internet.

Amy's challenge for week 5 was to

203.4!!!


"Hello!" say my guinea pigs :)

203.4 at my weigh-in. Woo-hoozle! I told you I'd rock it this week! And here's the thing...it came off so easily! My body WANTS me to lose this weight, and makes it pretty darn easy if I just do MY part. Treat it right, and it reacts just how I want it to :)

Since I've been a bad blogger this week, I am just posting some pics of some of the eats from this week....

Goals



Time to set some goals for Amy's 15 Week Challenge. It's something I've been meaning to do for awhile, so her challenge came at the perfect time!

LONG TERM GOALS AND REWARDS:
GOALS:
Weight - I would like to be comfortable with my body. For me, I think that means a weight of around 140. Its on the heavy side for my height, but I've never been a small girl, and I, and my hubby, like CURVES!
Fitness - Someday, I hope to be able to run 10 miles. Its a while away, but it will be done!

Emotional - I want to be confident. Thats all. I just want to be happy within myself.

REWARDS:
When I get to my goal weight, I am going to order a custom pair of jeans. I found the site awhile ago and it has been labeled as my reward for awhile.

SHORT TERM GOALS AND REWARDS:
GOALS:
Weight - I would like to lose 10 pounds by the beginning of next school year, which is September 2.
Fitness - I want to finish my Couch to 5K program and be able to run a 5K. No goal time, just to finish :)
Emotional - I want to be able to stop letting my emotions control my eating (maybe this should be long term???). I want to be content with what I have now, and not be waiting for what "will be" in the future.

REWARDS:
I MAY get my nose pierced (small stud...no hoops for this girl) if I reach my goal weight...either that or a massage.
When I can run a 5K, I want to run with my assistant at work. He is an avid runner and I don't think he believed I would stick to it....

Randoms......
-My eating has been atrocious lately. And, that is why I had a nice gain this week. I'm back to 206.2. Lovely.

-My workouts have been pretty good. Yesterday, I did day 2 of Week 3 from the Couch to 5K and we walked in a parade with Stephanie (2 miles), and then walked around a festival for another 2 hours.

-I decided I need to buy some post-its to carry around to I can participate in Operation Beautiful, which is a wonderful program.

-I am going to ROCK IT this week.

I Did It!!!

Week 3, Day 1 of Couch to 5K .....COMPLETE! Woo hoo! I'm so proud of myself! Now time for the second try at a Green Monster....

Today....


When I woke up this morning, I was ready for my Green Monster. I made the basic version, with Spinach, a frozen banana, flax seed and milk. Threw it in my blender and whirred away...
I enjoyed it in a wine glass. It was great! Tasted like...banana....gives me great hope for trying new mixtures. Only problem...it SCREWED up my belly...I had to cancel plans! Not good. After some research, I think it may have been the flax? So I am going to try again tomorrow without the flax and see how it goes. Any other ideas why it may have made me feel icky?
The rest of the day consisted of some veggies......
An Amy's Organic Burrito, a veggie sandwich on an Arnold Thin, and a homemade pizza which I didn't get a picture of.
Oh, and a piece of ice cream cake. I'll take a pic tomorrow. It was good!

Even with the cake, I stayed in my calories for today! I was a little carb heavy, but it was OK.

Holy WHAT?!

So, I had O'Charley's for lunch today. I had never been there. Can we say, non vegetarian friendly?! I think there were 3/4 things on their HUGE menu that didn't have meat in them. And that includes appetizers and breakfast. It was rough. I got the brunch quesadilla....to the tune of 1200 calories!!!! Didn't know this until I got home. Yikes! I WILL NOT be visiting there anytime soon.
I remedied some of that (very little) with my last day of Week 2 of the Couch to 5K. Week 3 is psyching me out BIG TIME! The three minute runs make me really nervous...I'll be doing the first day on Tuesday, so I'll be sure to let you know how that goes.

I'm going to try to really clean up my eating. I am decent at staying within my calorie limit, but I could def be choosing healthier foods to fill up my belly. To begin my new way of eating, I am starting tomorrow of with my first official Green Monster. I'm trying to have an open mind.....
